FAQ

What is the difference between Ceylon and cassia cinnamon?

Ceylon cinnamon (Cinnamomum verum) is “true” cinnamon from Sri Lanka. It has thin, papery layered quills and a gentle, sweet flavour. Cassia, the most common supermarket cinnamon, has thick, hard bark and a stronger, sharper taste.

Should I buy whole or ground spices?

Whole spices keep their flavour longest – grind them just before cooking. Ground spices are ready to use and best within about a year of opening.

How should I store spices and tea?

Keep them in an airtight container in a cool, dry, dark place, away from the stove.
